Cool temperatures slow the growth of the tea leaf. This causes a build-up of flavour compounds — particularly catechins and amino acids — that are responsible for the complexity you taste in a well-grown high-altitude tea. The result is a natural sweetness, a clean finish, and a depth that mass-produced teas simply can't replicate.
